A quiet dinner at home


Today we decided to take it easy after such a busy first week of the new semester. It took a few stores to find all the ingredients but I cooked dinner tonight like the good old days. It took two or three places to find fish fillets where I did not have to de-head, skin, and de-bone the fish. We also managed to find tomatoes! Hooray! We had pan seared salmon over a bed of rice with sauteed onions and peppers, garlicky carrots simmered in white wine, sweet corn and fresh salads. It was good to have so many cooked vegetables that weren't pickled or cabbage, haha. We enjoyed the meal on our new flatware that we FINALLY got around to buying...before this all we had were two mismatched little bowls and one plate. Then we watched movies and looked at pictures of our roadtrip from before we left and had a quiet, enjoyable evening in our comfy little apartment.

Good news, by the way - our ceiling was fixed on Friday and we got a couch! I want to go to the store to buy a floor lamp and a few pillows but expect an update of our FINALLY decorated apartment with us all settled in soon.
