A Search for a Good Burger...

This morning I woke up from a great dream...I was sitting in Burgermiester in Cole Valley and had a huge platter with their onion ring bacon cheeseburger, half coleslaw and half fries in front of me. I was about to pick it up and take a big bite when I woke up to the cold reality that we live in Seoul and there are no amazing burger joints. After telling Nick about my dream and giant craving for a good burger we searched online and found that the "best burger" could be found in Itaewon at an Irish pub. We decided to check it out and see if it could satisfy our cravings.


We went to the Wolfhound and ordered their bacon cheeseburgers. The burgers were good, certainly better than any Korean attempt, but sadly were not exactly American burger status. They were very tasty, the bun was good, the garlic mayo and crispy bacon all perfect...but the patties themselves were a little more meatloaf-y than burger-y. Still not bad. Their chips were AMAZING though, big and perfectly seasoned and they had light, fluffy ranch(ish) dressing for dipping.


While munching on our food we met some interesting patrons at the pub and ended up wiling away the entire afternoon with new friends. Dinner time rolled around so we opted for the (also "award" winning online) fish and chips, which were delicious and probably the best fish and chips that we will find in Seoul. We will be returning for the fish and chips...maybe not the burgers.

Italian Meatloaf Makes Nick Happy


Tonight I made Italian meatloaf in my little baking dish and had some steamed broccoli, carrots and potatoes in a garlic butter sauce as the side. I minced up onion, carrot and garlic and mixed it into the hamburger meat with some olive oil, pasta sauce, rosemary, basil and pepper, baking the whole thing in my toaster oven until it was just crispy on the outside. Nick liked it. Nick ate all of it. Then Nick ate the rest of mine. Then he licked both plates clean.

I'm going to go ahead and say this dinner was a winner, haha.

Homemade popsicles!


While at our grocery store getting our week's supply of food we saw something on sale that we could not pass up - a Popsicle tray! We excitedly grabbed the plastic mold and headed off to the juice aisle. We got plum nectar, chocolate yogurt drinks and blueberry yogurt drinks and had a go at making our own Popsicles. We also made some Pepsi pops since we had received a free liter bottle when we purchased some chips at the 7-11. Nick and I had a nice day down in Insadong checking out the galleries and window shopping. I bought a new baking dish at the store as well and made homemade mac-n-cheese with cube steak and broccoli for dinner. Now I'm going to get around to grading some monthly tests...ugh. Hopefully this week won't be as busy as the last one!

A Very Busy Week...


Whew, what a week! We are very happy to have reached the weekend. School was insanely busy with monthly tests, grades to fill in and comments to write for all of our students. Throw in TWELVE birthday parties in the prekinder and kinder classes and it was pretty much nonstop work. Two of my kinder kiddies turned 7 this week so we had a nice party in our classroom. They have gotten so big since I started teaching them! Most of them have holey smiles due to multiple lost teeth and they've all gotten so much taller than the mini-munchkins I first met back in July! I made glittery birthday cards (with all the glitter my mom sent me from home!) for all of the kinder kids turning 7 and gave them stickers or small treats. The kids' parents brought in oodles of cake, cola, pizzas, fried chicken and snacks too...so we had sugar fueled students for a while. Below is my new favorite group photo of my kids - they are just too cute.


Today Nick and I went up to Ilsan since the weather has finally warmed up some and found a great soup house where we sipped on spare rib glass noodle soup and also chicken dumpling egg drop soup with seaweed. Yum yum. Afterward we had a tasty chocolate waffle and window shopped for a bit. Then we came home and watched a movie and lazed about, mostly just recuperating from the busy week. Tomorrow we'll do our errands and maybe venture into Insadong to check out the galleries, but we're keeping it relaxed this weekend. We are almost in disbelief at the fact that we've lived here six months now - Nick's six month mark is on the 25th, mine is five days later.

Stuffed Bell Peppers = MMMM


Tonight I wanted to make a nice dinner for Nick. I decided upon stuffed bell peppers with garlicky mashed sweet potatoes. I hollowed out the peppers and boiled them for 4 minutes to keep them firm but really lock in the flavor. I used mushrooms, onion, garlic, diced carrot and ground beef for the filling, all simmered in a mushroom wine sauce. I've been really happy that Nick has started enjoying mushrooms and that I can use them more liberally in my meals. I then poured the meat filling into the peppers and stuck them in my toaster oven to make them have a slight crisp to the outside. With the mashed sweet potatoes surrounding the peppers on the plates they looked like little volcanoes of deliciousness, especially since I poured all the extra filling and sauce all over the top of the dishes. Nick was most pleased, haha.

It's Cold So We Are Doing Nothing

This week it has been ridiculously cold. -6 degrees Fahrenheit cold...where is the gorgeous hot Thai sun we had just two weeks ago?? Of course, the cold has gotten to me and I have a sinus infection. Nick is still feeling well, lucky him. I went to the doctor and they gave me a plethora of medication and a shot in my rear to make me feel better.



We've hardly ventured out since we've returned to Korea...we've stayed mostly in Hwajung, only baring the cold to go to work and get groceries. Our apartment is still toasty and comfortable. We've been watching movies with friends and basically just cuddling to stay warm, haha. We have a new teacher at our school and he seems to be very nice, we are happy to have a new friend. We have shown him around town a little since his arrival and we plan on doing more once the weather gets a wee bit warmer.

School is good, this upcoming week is going to be very very busy...we have report cards due again and another round of monthly tests. My kindergarten kiddies are writing RESEARCH PAPERS in their writing class on animals, and I have been helping them gather information for their papers. They will write two pages and create a mobile of information to put up in the classroom. I'm constantly impressed with how advanced they all are. We had 9 perfect scores on last month's tests...perfect scores in every subject! I am so proud of them!!! My KT and I gave them a pizza party on Thursday for their hard work. Nick's children are as cute as ever. They have been reading a story called "Pignic" where pigs have a picnic. They had their own "pignic" where Nick got a bunch of snacks for them all and they drew their favorite foods on pig cut-outs that I drew for them. Nick took some super adorable pictures of them with their food in their mouths, making silly faces. :)

A Fun Day in the Snow




As promised, I took my kindergarten homeroom class out into the snow for a bit of fun yesterday.


We made snow angels and threw the powder-like snow all over the place. The snow wasn't compact-able enough to make snowmen or very good snowballs, but the kids were still quite amused running around and frolicking. They were very happy to make a snow "lump" hahaha. They especially loved it when I would have them stand under trees and shake all the snow down onto them.



My KT took many pictures of our class enjoying ourselves in the winter wonderland transformed park that is next to our school's building. I am so glad to have so many beautiful memories of my kinder kiddies! They graduate into the first grade in 5 weeks, and I am going to be more than a little sad to not see their faces every day. I'm currently not a first grade teacher, so I probably won't get the chance to teach them again while I am in Korea. I'm trying to cherish moments like these, I love my kids!

SNOW


We landed in Korea this morning to over 6 inches of snow. It snowed all day, and apparently snowed all weekend. Nick and I excitedly put on our snow jackets, scarves, gloves, hats and earmuffs and jumped around in it for a little while. It is COLD outside!


We are happy to be back home and amused with this winter wonderland! I'm planning on taking my kinder kids out to play in the snow in the park as soon as I can!

Back in Bangkok


Today we sadly left Pattaya and Jomtien and headed back to Bangkok. Our flight back home is later tonight, and our friends' flight is tomorrow morning. Our time here in Thailand has been an amazing experience and we are sad to go. The four of us piled into a car and had a relaxing trip back up the coast.

Upon arriving in Bangkok we decided to roam about the city and check out some of the more noteworthy sites. Our little group walked all along the large avenues, passing gigantic photos of the King plastered everywhere. We saw the Royal Race Track, one of the King's Palaces, a few open air markets, The Democracy Monument, and many other interesting things on our way to nowhere in particular. It was the hottest, most humid day we have yet had in Thailand. There were moments when I thought the heat would overtake me and I would faint. In fact, our friends ended up having to leave us in our adventures and return to their hotel because the heat ended up making one of them sick.



On our own again, Nick and I grabbed a tuk tuk and had him show us around the temples of the city. He took us to some beautiful temples. One had a massive golden Buddha statue. The temple area was full of people praying with lotus flowers in their hands, making well wishes for the New Year.



We also went to the Golden Mountain, which was a stunning temple on top of a mountain in the middle of the city. There were beautiful stairs carved into the mountain with landings spaced out along the ascent. Each landing had prayer bells lined up along the path and as the throngs of people walked past each one rang the bells, creating a constant harmonious clanging. We alternated between marveling at the city views and marveling at the temple as we climbed up the hill.


Upon reaching the top we entered the temple and viewed the golden statues that were adorning the middle of the temple. It was beautiful and very peaceful, even though there were hundreds of people also making the trek up and in with us. It was also very very hot.


We walked back down the steps, again ringing the bells as we passed them, and exited the mountain to the circular road around the whole site. Street vendors sold all sorts of delicious looking treats and we headed back to the long line of tuk tuk drivers to catch a ride back to our friends' hotel where we had stored our bags. We checked to see how they were feeling and then took a cab to the airport. Soon we will be on a plane going back to Korea, and on Tuesday school begins again. We are sad to go but also missing our home. We are looking forward to seeing our students again. It has been a wonderful vacation; we feel so lucky to have had such an amazing time here in Thailand.
